10 oz. bag of baby spinach leaves
¼ lb. of goat cheese
1 small red onion, very thinly sliced
1/2 cup Paradise Meadow Sweetened Dried Cranberries
1/2 cup roasted pecans
Poppy Seed dressing (below)
For the Poppy Seed Dressing:
1/4 cup sugar
1 tablespoon poppy seeds
¼ cup red wine vinegar
¼ cup extra virgin olive oil
- To make the dressing combine all ingredients in a blender or whisk thoroughly to combine. Chill.
- Combine spinach, cheese, onions, cranberries and pecans in a bowl. Toss with Poppy Seed dressing just prior to serving or serve on side.
